The Burro St. Nick Burrito
If you’ve been to New Mexico, you know the most important philosophical question is “Red or green (chile sauce)?” You probably also know how hard it is to walk away from either sauce, and end up getting it Christmas style (both red and green). Our Burro St. Nick is a breakfast burrito packed tightly with eggs, beer braised pork, hash brown tumblers, cheddar, sauteed peppers and onions, and topped with – you guessed it – Christmas sauce.

Perfectly tender, steel cut oatmeal topped with brown sugar, gently torch brûléed to an icy brown shell, then topped with colorful berries and surrounded by fresh-sliced bananas. Be forewarned – you’ll never look at oats the same way again.

Let’s talk about “scratch.” When we say Hatch is a “scratch kitchen”, we’re not just recklessly tossing around culinary buzzwords. We mean it. Virtually everything that we can make from scratch is, in fact, made from scratch: Four hollandaise sauces, pancake batter, crusty sourdough bread, everyone’s favorite hashbrown tumblers – you name it, it’s scratch.
